You can make a Thanksgiving feast in your Indian kitchen this week

Thanksgiving is just around the corner and if you, like us, would like to indulge in a feast straight out of your kitchen with bold flavours, we’ve got you covered. Thanksgiving in an Indian kitchen doesn’t mean sidelining tradition, it can be a great way to reinterpret it with local flair. Turkey, now increasingly available in India, can be seasoned with tandoori spices for a smoky, vibrant centrepiece. Roast it in an oven or adapt by marinating and steaming portions in a pressure cooker before crisping them on a stovetop grill.

If turkey isn’t your thing — or isn’t available — a whole roasted chicken makes for a fantastic alternative, bringing a similar festive feel to the table. For vegetarians, maybe a stuffed pumpkin or butternut squash filled with spiced rice, lentils, and nuts could do the trick. Another option could be a festive paneer or tofu roast, marinated with Indian spices and baked to golden perfection.

On the side, you can serve some cranberry chutney laced with chaat masala and cumin-spiced mashed potatoes. End the feast with pumpkin halwa drizzled with maple syrup — a playful nod to tradition.
